Mmmm.....Brownies.....

I'm not going to lie. I LOVE brownies! They are my dessert of choice.
I know, simple pleasures, right?

Today I caught an episode of The Barefoot Contessa (another one of my favorites!) on The Food Network.
The title of the episode:

Chocolate Memories

She had me at "chocolate"...

The segment that really caught my attention was when she made her

Outrageous Brownies

I'm dying to try out this recipe!
...............................................................................................................

Ingredients

  • 1 pound unsalted butter
  • 1 pound plus 2 cups semisweet chocolate chips, divided
  • 6 ounces unsweetened chocolate
  • 6 extra-large eggs
  • 3 tablespoons instant coffee powder
  • 2 tablespoons real vanilla extract
  • 2 1/4 cups sugar
  • 1 ¼ cups flour, divided
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 3 cups diced walnut pieces

Directions

Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.

Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.

Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan.

Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.

........................................................................................................

My brownie obsession isn't entirely about the brownies. It's really about the corners. I couldn't care less about the brownies in the middle of the pan. I'll take an edge piece over the middle, but what I really want is a corner. And when it comes down to it, that's really only four smallish pieces.

So imagine my delight when I found this!

It is called The Edge Brownie Pan. You can find out everything you want to know about it here!

I'll take one!

Maybe my sweetheart will surprise me with a made-for-me brownie pan for Valentine's Day!

Can you believe it?? I'm not a fan of chocolate... but if I were and brownies were a passion, I'd definitely opt for the corners/edges, too. That little bit of carmelized sugar and crunchy goodness looks so scrumptious!! Really - I'm not joking!! And that pan is perfect, isn't it?!
Fingers crossed that your honey gets one for you!!

What a great pan. I love the middle and my DH love the edges. We could both be happy with this pan. That recipe sounds just wonderful, I will definitely try that one. Hugs, Marty

I love brownies too! Especially ones with chocolate frosting on the top. That is a really neat pan. I may just have to get one.

Just have to say that you and I would be great brownie partners. I prefer the middles! I am constantly trimming them (eating them :) so that they are evenly cut! Was that recipe correct? 1 lb Plus 2 cups of chocolate? Holy schmoly!
